Ingredients for Red Gravy
1 yellow onion
1 red pepper
1 yellow pepper
1 cup of celery
(If you prefer, use 1 small bag of seasoning blend.)
Fresh parsley
Cooking oil (I use avocado oil)
3 – 12 oz cans of tomato paste
1 – 12 oz can of tomato sauce
1 cup of Swerve granulated sugar replacement (I replace Swerve for one cup of sugar. However, you can adjust to your sweetness preference.)
1/2 tsp salt
Pinch of pepper
1 to 2 tsp of garlic powder
Directions
Add 2 T of avocado or olive oil to a pot.
Add cut up vegetables: onion, red pepper, yellow pepper, and celery to pot – or use 1 small seasoning blend bag.
Saute until softened.
Add tomato paste, tomato sauce, Swerve (you can adjust to your desired sweetness), salt, pepper, and garlic powder.
Saute about 15 minutes stirring to keep from sticking.
Fill the pot 3/4 the way with water and cook for 1 and 1/2 hours. You can cook longer until the gravy is to your desired thickness.
Red Gravy Can Be Used For a Variety of Dishes
- Add carrots, zucchini, squash, broccoli, and shrimp.
- Add okra and boiled eggs.
- Add spaghetti squash (or any type of spiraled vegetable).
- Enjoy.
