Bean Salad (Cowboy Caviar)


1 bell pepper

1 orange bell pepper

1 red bell pepper

1 green bell pepper

1 yellow bell pepper

2 jalapenos (you can leave out if you want)

1 red onion

candied jalapenos (I love these in the recipe)

2 cans of black beans

1 can pinto beans

1 can sweet corn



**** You can use a variety of beans, whatever you like. You can also add fruit if you wish, like mango and black olives. I like pepper jack cheese; however, feta is good also.  I add the avocado and cheese right before I eat a serving.



Juices of 3 limes

1/2 cup olive oil

1/4 cup white wine vinegar

3-4 tbsp taco seasoning

salt and pepper to taste

3 or 4 tbsp of Mike’s Hot Honey




Mix the first set of ingredients in a big container. Make the dressing in a jar so that you can shake it easily. Then, pour the dressing in the bean salad. Mix. 

Before you serve, add the avocado and cheese.
