Zucchini Egg Bites


4 eggs

3 zucchini

baby bell peppers


cheese (optional)

salt and pepper to taste

olive oil spray



Spray a muffin pan with olive oil spray. (optional – use tin muffin cups)

Peel and slice the zucchini in long, thin strips. Place two stripes in each tin. (This recipe should make 9 egg bites.)

Lightly beat the 4 eggs in a measuring cup (so you can easily pour mixture in tins). Pour the egg mixture in the tins. 

Add spinach, chopped up peppers, and any other toppings of your choice like cheese and other herbs.

Bake at 350 for 20 to 25 minutes.
