1 cup dry old fashioned oatmeal
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1/2 cup mini chocolate chips
1 teaspoon vanilla extract
Add all ingredients to a medium bowl and mix to combine well. Create a big ball with the mixture.
Stick the bowl in the freezer for about 20 minutes. This will allow the Energy Balls to stick together when rolled.
After freezing time, take a tablespoon of the mixture in your hand and roll into a ball.
Repeat with remaining mixture.
If your Energy Balls are not sticking together, you may add a little more honey or peanut butter, mix again, then try to roll again.
Store in an airtight container in the refrigerator for up to 2 weeks, or much longer in the freezer.
I use 2 Energy Bites as one serving.
