Ingredients
1 pound bag of red beans ( I use Camellia brand.)
2 Tbsp of olive oil
1 large onion
2 stalks celery
1 bell pepper
1 red pepper
1 32 oz vegetable stock
water (as needed)
1 10 oz can of Original Rotel
1 16 oz can of Blue Runner Original Creme Style Red Beans
1 to 2 tsp Spice World Organic Garlic
Hot Sauce (add to your desired taste)
Salt and Pepper (to your taste)
Directions
Soak red beans in a large bowl overnight in water.
Drain and rinse.
Chop onion, celery, and slice peppers.
In a large pot, heat olive oil on medium, add onion and celery, and cook down until you see the onion is getting soft. Add peppers, garlic, salt, pepper, and hot sauce. Cook down a few more minutes.
Add can of Rotel. Stir.
Add vegetable stock, a can or water, and red beans.
Bring to a boil. Reduce heat, cover, and cook for about 2 hour, stirring occasionally. Add more water if needed.
Add can of Blue Runner. Stir. Squish a few beans. Cover and cook another 1/2 hour to thicken.
Add some more hot sauce to taste.
